<p><strong>Pastichio</strong> &#8211; our greek lasagna !  for those who haven&#8217;t tried it yet, it&#8217;s a layer of hollow noodles dressed with feta topped with Cohen Farm ground beef seasoned greek style then topped with bechamel and baked till golden ($8)</p>

			<content:encoded><![CDATA[<p>I am thrilled we&#8217;re finally open today!  I missed hanging out with customers and begging for vegetables from our farmers.  Plus, if I had to watch one more musical with John I was going to start crying : )  South Pacific, Man from La Mancha, and more &#8230;. so there&#8217;s some insight for you guys &#8230; John LOVES musicals and knows almost all the songs.  I was left little choice but to hang out on the porch and feed all the pretty birds that found themselves wondering why they flew here this early.  of course lots of finches, a cardinal and a robin and 2 pretty dang funny woodpeckers.  Hopefully you all enjoyed a couple of fun days with some snow play and some extra rest.</p>

<p><strong>Lentil Soup with Kale</strong> &#8211; Alan&#8217;s excellent vegan lentil soup with Rocky River kale and carrots. ($3) GF</p>
<p><strong>John&#8217;s Excellent Green Chile Beef Stew</strong> &#8211; Murray Cohen&#8217;s stew beef with lots of veggies, homemade beef broth and Piedmont Biofarm and NM green chiles ($4) GF</p>
<p><strong>Cohen Farm Pork Fest!</strong> &#8211; yes Murray and Esta raise pigs and today we have prepared some lovely pork shanks and steaks for everyone to try. Wine braised with root veggies, it melts in your mouth. Served with a side of mac n cheese and a side of kale ($10) GF</p>
<p><strong>Braised Rocky River Kale and Carrots</strong> &#8211; beautiful lacinato kale and sweet carrots braised in a light olive oil and tomato ($3 sm  $5 lrg)</p>
<p><strong>Alan&#8217;s FAMOUS Macaroni and Cheese</strong> &#8211; I can vouch for Alan&#8217;s mac and cheese, every time he made it at the coop it was the first item to sell out!  He starts with a bechamel and adds lots and lots of cheese &#8211; then smothers elbow macaroni.  ($3.75 small  $6.75 for a large)</p>

			<content:encoded><![CDATA[<p>Another rainy day, and I am sure the veggies i the field are grateful -so in turn we are grateful.  Bill Dow just delivered the most beautiful amaranth! this is the first year he&#8217;s growing it, so he doesn&#8217;t quite get how much (quantity wise) we would use here in the kitchen.  I promise to share the little batch &#8211; but we&#8217;re getting Bill to grow a lot more next year &#8211; he has the hard part down which is picking the right variety and growing it.  Also a fresh shipment of pork from Tucker Family Farm (Okfuskee).  Life is good with all this amazing food right here.</p>
<p><strong>Green Chile Beef Stew</strong> &#8211; John decided it was time to turn up the volume, so his batch of chile today is quite &#8220;HOT&#8221;.  we can also thank Doug for his excellent green chiles and Cindy for the amazing beef.  Come see if your heat tolerance is up to john&#8217;s ($4)</p>
<p><strong>Swiss Chard Cheesy Bake</strong> &#8211; Alan&#8217;s now famous greens cheesy bake, today featuring swiss chard from Will and Tabitha at Rocky River. ($5)</p>
<p><strong>Avgolemono (greek chicken soup)</strong> &#8211; we can&#8217;t seem to make this fast enough, especially with the cooler weather.  Come by and see why this is everyone&#8217;s favorite soup. ($3)</p>
<p><strong>French Lentil Soup</strong> &#8211; french lentils with carrots and garlic and a touch of bay leaf.  delicious warm or piping hot. ($3)</p>
<p><strong>Roasted Leg of Lamb </strong>- even Alan said this was good : )  slow roasted Chaudry lamb with herbs from our garden and a touch of tomato ($8 as a sandwich with 3 toppings)</p>

			<content:encoded><![CDATA[<p>It&#8217;s another awesome day in the kitchen!  Doug delivered an amazing batch of green chile and the smell is intoxicating.  Unfortunately Chile Shack John is feeling uner the weather sos we won&#8217;t be rasting till late this afternoon  &#8230;.. but if you see our blue ten up in the parkin glot stop by and say hello and enjoy the unmatched aroma of fresh roasting green chiles.  WE LOVE BIOFARM green chiles and hope you will too!  We used some of Doug&#8217;s chiles in todays batch of green chile stew &#8211; and if i do say so myself its one of the best batches ever.  Also, join us in welcoming Kelly to our fantastic kitchen team.  Be sure to say hi when yu come by today.</p>

<p>Also, our very own Missy Elliott was on a flight early this morning off to college.  We can rest assured shes well on her way to learning everything possible about soil management and engineering and hopefully she will come back here to use all that excellent knowledge (not to mention give us a break on some of her awesome veggies and fruits).  Everyone toss out a little shout out to the universe wishing her well &#8211; i know i already miss her alot!  (as a quick side note, John [who is mushier than he appears] is wearing the &#8220;pearl snap&#8221; shirt Missy gave him as a going away gift &#8211; be sure to let him know how handsome he looks in his new shirt)</p>
<p><strong>Josies Crazy Good Green Chile Enchiladas</strong> &#8211; one great thin about Sep being here?  green chile specials all the time!  Today its josies favorite, green chile chicken enchiladas with local organic chicken and green chiles.  and BTW  we did make a GLUTEN FREE pan.  ($7)</p>
<p><strong>String Beans Al Greco</strong> &#8211; lovely string beans from Another Roadside Attraction with some organic carrots and local tomatoes.  This is a staple in te greek late summer diet. Enjoy with a dollop of greek yogurt ($5)</p>

<p><strong>Green Chile Cohen Farm Sliders</strong> &#8211; we had Murray&#8217;s beef yesterday, and it sold out so fast we decided to add it again today!  3oz burgers on mini rolls with cheddar and/or green chile upon request.  Simply delicious! ($2.50)</p>
<p><strong>Green Chile Stew</strong> &#8211; This is a mix od Cohen tri tip and Smith Angus stew meat, with Aimless Farm green chiles and whatever John thought would taste good : )  I know it&#8217;s extra good since John used up a beef stock I made the other day.  ($4 12 oz cup)</p>

			<content:encoded><![CDATA[<p>It&#8217;s official &#8230; lots of NC county folks actually like food with either lemon juice or green chiles.  We are going to do what we can to be the runner up to Hatch, NM for green chile in the US.  The green chiles are coming in from several farms and they are pretty spectacular.  Having native New Mexicans in the shop and having lived there for15 years, I can attest to the fact that once these awesome chiles get in your blood stream they are addictive.  Folks pay alot of money to have them shipped in from NM.  Now we can simply go get them at our farmers market or at our take out !!</p>

<p><strong>Green Chile Chicken Enchiladas</strong> &#8211; no lemons in this one, local green chiles, local organic chicken and Josie&#8217;s superb green chile enchilada sauce !  Most are wrapped in flour tortillas, but we have made some GLUTEN FREE corn tortillas for our gluten free friends.  ($7)</p>
<p><strong>Green Chile Cheeseburger Sliders</strong> -  3 oz burgers made from Cohen Farms fabulous ground beef, local roasted green chiles and whatever toppings you want all on a mini bun.  ($2.50 each)</p>
<p><strong>Braised Leeks and Carrots</strong> &#8211; Ayshire Farm leeks (thanks Daryl and Bill), organic carrots and local tomatoes  ($3/$6)</p>
<p><strong>Greek Lemon Chicken Soup</strong> &#8211; Our homemade organic chicken broth and orzo soup finished with fresh lemon juice and local eggs.</p>
<p><strong>Roasted Organic Chicken</strong> &#8211; local organic chickens doused in lemon juice and greek spices, then roasted till golden (see menu)</p>
<p><strong>FROZEN YOGURT </strong>- our thick greek yogurt, Busy Bee Farm honey and &#8230;</p>

<p>By the way, come by the kitchen and let Missy know how much you&#8217;ll miss her when she goes off to school next tuesday!  She&#8217;ll be here today, tomorrow and monday and then she&#8217;s off to BYU to get her degree in environmental science (or engineering) so she can come back and be an amazing soil specialist and farmer !!</p>
<p><strong>Egyptian Spinach Vegan Risotto</strong> &#8211; Edible Earthscapes lovely egyptian spinach with medium grain brown rice and leeks and onions.  Served with a wedge of lemon or a dollop of greek yogurt.  ($5)</p>
