another activity filled day here in sunny downtown historic Pittsboro. Did I mention how much I love the outdoor brick oven at CCCC ? Joe Kenlan, a master mason, evidently has been secretly building these awesome kick ass brick ovens on select super lucky peoples’ properties throughout the county. I assure you the minute I hit some lottery money I’m running to Joe to build me one. (maybe just in front of the shop so more people will come in and get some food) In the meantime, anyone with one of Joe’s ovens …. I’m available to cook at your place!
Another quickie, yesterday Link went out to Murray and Esta Cohen’s farm and harvested some amazing beautiful greens; swiss chard, kale and mustard to be exact. Today you will find these beauties in most of our dishes. Murray and Esta are a serious Chatham County treasure. Honestly, you need to know these people ! I don;t think I know of a more sustainable farm than the farm they run. They grow fabulous veggies (which is a side note) their main focus is organic, sustainably raised cattle. They raise all their own feed and tend for the cows from birth to our plate. Make an effort to support these types of farms – a healthy future depends on people like Murray and Esta.

Moussaka – Piedmont Biofarm eggplant, Cohen farm ground beef and Alan’s delicious GF bechamel. ($8)
Sauteed Swiss Chard – the beautiful fresh Cohen farm swiss chard sauteed in extra virgin olive oil, some carrots and potatoes. ($5)
Wild Greens Cheesy Bake – Cohen farm greens, local eggs (from Alan’s cute chickies), ricotta and cheddar cheese ($5)
Lentil Soup – a nice easy going cup of lentils that suits this crazy changing weather ($3)
Green Chile Beef Stew – Smith Angus farm (another excellent beef farmer) stew meat, Piedmont Biofarm chiles and veggies ($4)
Collard Rice – Cohen farm greens cooked with brown rice and leeks. ($3 sm / $5 lrg) (if we’re lucky, Shelly will come by with Nori leaves and we’ll make some rolls later)
FROZEN YOGURT – our thick greek yogurt, Busy Bee Farm honey and ….
PUMPKIN FRO YO … wooowhooooo pretty soon we’re gonna be putting pumpkins and squashes in everything! oh and BTW … I think josie put in some dark choc chips!
