happy friday fellow chathamites! Maria and I are almost done prepping a mountain of fabulous greens for the greens bake today. If you haven’t tried this dish out yet – get on in here and enjoy a full day’s serving of greens in a small muffin shape. this may be the best batch yet – it includes beet greens and rainbow swiss chard and fancy mustard greens from Piedmont Biofarm; leeks and arugula from Aryshire Farm; turnip greens and mustard greens from Silk Hope Produce (thanks Tom!) and brussel sprout greens from Edible Earthscapes (leave it to Jason and Haruka to provide this unusual tasty green)

i loved the greens bake today. suggestion: how about serving a wedge of lemon or lime with the muffin! adds a nice brightness to a very very good meal.
