When Josie, John and I decided we would open a little local food restaurant in tiny little Pittsboro we thought it would be “Fun” : )   For years we had enjoyed restaurant food all over the USA – we had our favorite spots in New Mexico and had even found a few here in North Carolina.  During all the time we ate out we never imagined how much frigging work goes into owning and operating a small teeny weeny take out (which is how we started!)  Well it’s almost three years since we opened the shop and we are here to tell you – you do in fact have to be more intelligent than you would think, harder working than you ever imagined and you have to have a sense of humor.  So for anyone wondering what happened over the GSC – keep in mind, this is a labor of love –  you should respect the amount of sweat, blood and tears that went into making that place happen.
